Molly's famous flatbreads
These are a Roots & Vines favourite — Molly's soft, pillowy flatbreads, finished with garlic butter and a scattering of fresh coriander. They use just three simple ingredients for the dough, with no yeast and no waiting around, so you can have warm, homemade flatbreads on the table in well under half an hour. Perfect alongside our harissa roast lamb, scooped through dips, or simply torn and shared warm.

Ingredients
For the dough
- 300g self-raising flour (we sell Wessex Mill flour), plus extra for dusting
- 1 tsp Cornish Sea Salt
- 300g Greek-style natural yoghurt (our local natural yoghurt is perfect)
For the garlic butter garnish
- 50g butter (local butter, melted)
- 2 garlic cloves, finely crushed
- A small handful of fresh coriander, finely chopped
Method
- Tip the flour and salt into a large bowl and stir together. Add the yoghurt and mix until it starts to come together into a rough dough.
- Turn out onto a lightly floured surface and knead for 2 to 3 minutes, until smooth. If it's a little sticky, add a touch more flour.
- Divide the dough into 6 equal pieces. Roll each one out into an oval or round, roughly 5mm thick.
- Heat a dry frying pan (a heavy-based or cast-iron one is ideal) over a medium-high heat. Once hot, lay in a flatbread and cook for 1 to 2 minutes, until it puffs up and golden spots appear underneath.
- Flip and cook the other side for another 1 to 2 minutes. Keep the cooked flatbreads warm under a clean tea towel while you cook the rest.
- Meanwhile, gently melt the butter and stir in the crushed garlic.
- Brush each warm flatbread generously with the garlic butter, then scatter and lightly press fresh coriander over the top. Serve straight away.
Cook's notes
- No self-raising flour? Use plain flour with 2 tsp of baking powder stirred through.
- Keep them warm: wrapped in a tea towel, they stay soft and warm until you're ready to serve.
- Make them your own: press in nigella or sesame seeds before cooking, or add a pinch of chilli to the garlic butter for a little heat.
